They're just ZIP files, just change the extension to ZIP, then find the manifest.json file, you might need a json editor to make it look nice.

PeaZip works, just right click the CRX then hit extract file. Did not even need to rename it to a zip, surprised how easy it was to open CRX file.

Used mostly gimp for image editing the .PNG images, and a Notepad for the .Json files.

you can use Android Studio command line tools to generate all the different sized images, but it can be a bit of overkill getting it set up for just a one off
